This community service program was carried out in Gampong Jawa, Kutaraja District, Banda Aceh City, with a focus on training the community to produce nutritious local food products made from Moringa oleifera, Centella asiatica, dan Curcuma xanthorrhiza as an effort to prevent stunting. Field assessments identified two interrelated key problems: (1) the socio-community aspect, reflected in the limited understanding of cadres regarding nutrition education based on local plants such as Moringa, C. asiatica, and Curcuma, as well as the absence of sustainable educational media at the community level; and (2) the production and economic aspect, referring to the lack of technical skills, limited simple equipment, and the absence of standardized formulations for processed products made from Moringa, C. asiatica, and Curcuma as supplementary foods for stunting prevention. The implemented solution included training in the production of nutritious processed foods using these local plants, which are rich in essential nutrients for child growth and development. The program was conducted through socialization, education, technical training in product processing, and monitoring using pre–post-tests. The results demonstrated an increase of ≥80% in participants’ knowledge and ≥80% in practical production skills, along with the emergence of micro-enterprise initiatives based on local herbal food products. This program shows strong potential to serve as a sustainable village empowerment model to support stunting prevention and strengthen household-level economic resilience.
